Cooking with Coco is a recipe and cooking series that shows you how to create delicious meals and decadent treats using WÜSTHOF's expansive line of knives and kitchen tools.
2 cups diced bell peppers, any colour
1 cup corn, frozen, canned or fresh
1/2 cup chopped carrot
1 minced jalapeno
1/2 cup chopped red onion
2 cups black beans
1/4 cup cilantro or parsley, roughly chopped
For the Dressing You Will Need:
1/4 cup canola or other light tasting oil
2 tbsp. red wine vinegar
1 tsp. cumin
salt and pepper to taste
1 tsp. sriracha, optional
1. Chop peppers, carrot, onion and cilantro.
2. Mince jalapeño.
3. If using canned beans and corn, rinse and drain.
4. Mix these together.
5. Mix red wine vinegar with oil and spices.
6. Add dressing to vegetables. Stir and serve.
