Cooking with Coco is a recipe and cooking series that shows you how to create delicious meals and decadent treats using WÜSTHOF's expansive line of knives and kitchen tools.
4 cups cubed watermelon
4 sliced heirloom tomatoes
2 peeled & sliced peaches
1/2 cup crumbled blue cheese
1/2 bunch watercress
1/4 cup coarsely chopped cilantro (optional)
Coco's Fresh Lime Dressing
3 tbsp. fresh lime juice (approx)
1/4 cup grape seed oil
1/2 teaspoon kosher salt
1 tbsp. minced shallot
pepper to taste
- Using WUSTHOF's Super Slicer, cut the watermelon into quarters, then cubes.
- Slice the heirloom tomatoes.
- Peel and slice peaches.
Coco's Hint: Boil water, submerge peaches for 1 minutes. Then, using a WUSTHOF serrated utility knife, flawlessly peel off skin.
- Put ingredients in a salad bowl.
Coco's Hint: For better presentation, put in half the ingredients, add dressing and toss. Then repeat with the rest. Since there is so much water in the fruit, make just before serving.
